Hillbilly Bean Soup

Ingredients:
2 cups St. James Winery Chardonel Wine
1 package mixed dried beans
1 pound ham pieces
1 clove garlic, chopped
1 large can tomatoes, diced
1 tbsp parsley
1 large onion, chopped
juice of one lemon
6 cups water
1 cup chopped celery
1 cup chopped carrots
1 tsp thyme
1 tsp rosemary
2 bay leaves

Method:
Rinse beans. Cover with water, add 1 tablespoon salt and soak for 3 hours or overnight.

Drain beans, and add 2 cups of wine and water.

Add the rest of the ingredients. Simmer until beans are soft (at least four hours).

May be kept in a covered container in the refrigerator for up to four days.
